Prga

The traditional cheese of Podravina, which has recently been rescued from oblivion and is now ever more frequently found in town markets, is called prga, or prgica. Several variations of its production are known, the most common method being as follows: strained fresh cottage cheese is mixed with cream; salt and ground red paprika are added, and sometimes garlic. The mixture is shaped into small cones which are left to air dry, but it can also be smoked.
